1.) In a large pot add beer, onion and peppers and bring to a boil. Add brats and simmer for 15 minutes. Remove and transfer to a hot grill. Grill all sides over high heat untill cooked through, about 5 minutes.
2.) Meanwhile prepare the cheese sauce. In a small pot over medium low heat, whisk together butter and flour. Cook for one minute, then slowly whisk in the beer and milk, stirring constantly.
3.) Continue whisky over medium-low heat until mixture has thickened, about 3-5 minutes.
4.) Remove from heat and immediately stir in cheese. Continue to stir until cheese is melted and sauce is smooth.
To serve, place brats in buns with peppers, onions and cheese sauce.
