Traditional ‘Oude Geuze’ VAT 109 is a Monoblend composed with 90% Lambic from cask (foeder) N°109 and 10% young Lambic. The Lambic used for this Geuze was brewed on the 16th of April 2014 and bottled on the 18th of April 2016. Foeder N°109 is an oak cask of 9000 liters and it is over 100 years old. It was built in Germany around the year 1910 by the company Drexler as part of a series of four foeders as a “beer foeder”, but since 1935 it was used to stock cognac. In 2009 the cask was put into service at our brewery after it was shaved on the inside. The foeder still gives a special cognac-character to the Lambic which ages on it. This is the reason why we have selected this cask for our VAT-series. VAT 109 is also the first Geuze in this series made for 100% with Lambic brewed in our new brewhouse. The Lambic for Traditional Oude Geuze Boon VAT 109 has aged in foeder N°109 for 2 years. After being bottled and having aged for at least another 6 months in the bottle, VAT 109 is now ready to be enjoyed. With a fermentation degree of 93% this Geuze is not extremely dry, but still full-bodied, a perfect balance. The wild yeasts in the Lambic of VAT 109 have created a richness of tastes and aromas: oak wood, spicy-smokiness, some vanilla notes, dry fruit and peaches. Supported by an alcohol content of 8,25% Vol., this Traditional Oude Geuze is a perfect accompaniment to venison dishes and old cheese. To be served at 15°C in a clean and dry tulip glass. Pour carefully so that the beer obtains its bright color and leave a residue of 1 cm in the bottle.
